CIA definitely has the best resources and best history/alumni of any culinary arts school in the country (world?). Although the students also have a reputation for being really, really, really pretentious and somewhat delusional.
When people talk of the freedom of writing, speaking or thinking I cannot choose but laugh. No such thing ever existed. No such thing now exists; but I hope it will exist. But it must be hundreds of years after you and I shall write and speak no more.

ive been through a few culinary courses. they move as they wer, fuck it. they are slow, jackleg fucks in a hard ass profession. experience is the profered curency of respect in the kitchen i work at. hard ass work and perserevence is the quarters and dimes. i have no idea why im speaking in analogies, it must be my depression and my inability to show my anger to my fucking chef because i'll loose my job and its only febuary.
