Quick, simple, vegetarian - 02-11-05

I'm trying to lose weight and I'm also a vegetarian with a gluten intolerance, so it can be really difficult to concoct things that actually taste nice.
But occassionally I manage it, and I've just created something which tastes really nice:

100g quorn pieces
3 cubes frozen spinach
spray oil (that 1 cal stuff)
1/2 an onion
2 mushrooms
1/2 tin plum tomatoes in juice
black pepper

Use 5 or so sprays of oil in a frying pan. Put the spinach cubes in a bowl in the microwave to defrost for 5 minutes and then chop up the onion.
Fry the onion until soft, then add the spinach when it's defrosted, fry for a couple of minutes then add the tinned tomatoes and cook for another couple of minutes or so.
Add your quorn, stir it about a bit for 5 minutes, add your mushrooms, cook until they are soft, season with pepper and then serve.

Serves 1, but a hungry 1!

Sounds delish!

Try this one, I think you'd be ok with it. Vegetarian Shepherd Pie

1 bag of Quorn mince
1 onion
teaspoon lazy garlic (fresh if you can be arsed)
Can of chopped tomatoes
Can of carrots
5 tablespoons of soy sauce
Bag of smash (not sure about the gluten content, once again, use fresh if you can be arsed)
Fry Lite

Method

Spray pan with fry light, chuck in chopped onion and Quorn mince. Cook until the onion has gone soft. Chuck all the other ingredients in and cook on a medium heat until.. you can't wait any longer..

Put the mixture in a casserole dish, top with potatoe (I sometimes put a sprinkling of cheese on top). Ban in the oven on 200 fpr about 20 minutes.

Serves about 5, but it keeps well for a few days in the fridge.

does anyone know how to make potatoe pie? I saw it on TV and it look so tastey. I was hoping I can change potatoe to sweet potatoe becasue it is sweeter

Ooh, urm, not exactly!
How I used to make a potato bake was to cut up potatoes into slices about 1/2 cm thick, then put them in the dish in layers.
Make a simple white sauce (or buy one!) and then mix in whatever I wanted, usually cheese for me but you can put bacon, ham, chicken, anything really.
Then baked it for about an hour until the potatoes were soft.

But I have a feeling that's not what you mean..

I think when I saw it on the TV it look sort of like mashed potatoe and than they put it in the pie shell. It bake like a pie. I am not sure what you suppose to put in the potatoe. It looks delicious

I found some...
  • 1 cup cooked mashed sweet potatoes
  • 1 teaspoon vanilla extract
  • 1/2 stick melted margarine
  • 1/2 cup white sugar
  • 1/2 cup dark brown sugar
  • 1/4 cup egg substitute
  • 1 dash salt
  • 1 dash each cinnamon and nutmeg
  • 1 unbaked pie crust
Preheat oven to 400. Mix together sweet potatoes, extract, margarine, white and brown sugars, egg substitute, salt, cinnamon, and nutmeg. Blend well. Pour into pie crust and bake 12 minutes at 400. Reduce oven temperature to 350 and bake until done.

  • 1 (9-inch) pie shell, unbaked
  • 3 tablespoons flour
  • 1 2/3 cup sugar
  • 1 cup mashed sweet potatoes
  • 3/4 cup evaporated milk
  • 1/2 cup butter, at room temperature
  • 1/4 cup light corn syrup
  • 2 eggs, at room temperature
  • 1/4 teaspoon nutmeg
  • Pinch salt
Preheat oven to 350 degrees. In a large bowl, combine flour and sugar. Add remaining ingredients; mix well.

Pour into pie shell. Bake 55 to 60 minutes.

  • 1 1/2 cups crushed graham crackers
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons brown sugar
  • 1/2 cup butter, melted
  • 1 (8 ounce) package cream cheese, softened
  • 1 (29 ounce) can sweet potatoes, drained and mashed
  • 1/4 cup packed brown sugar
  • 1/4 cup light cream
  • 2 eggs, lightly beaten
  • 2 tablespoons vanilla
  • 1 (10.5 ounce) package miniature marshmallows
DIRECTIONS:

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch springform pan.
  2. In a medium bowl, mix graham crackers, cinnamon, 2 tablespoons brown sugar, and butter. Press mixture into the prepared springform pan to form a crust. Bake 10 minutes in the preheated oven, until lightly browned.
  3. In a large bowl, blend cream cheese, sweet potatoes, 1/4 cup brown sugar, light cream, eggs, and vanilla. Pour into the baked crust.
  4. Bake pie 1 hour in the preheated oven, placing marshmallows on top to melt during the last 10 minutes.

4 large potatoes
2 cups sugar
1 stick butter
1 pinch cinnamon
1 pinch nutmeg
1 store-bought pie crust
or your can just line a pan with vanilla wafers
instead
1/2 cup milk

Boil the potatoes until tender. When you stick a
fork in them it should go in easy but you don't
want them to fall apart.

Let the potatoes cool and then peel them.

Put the potatoes in a large mixing bowl and
mash them thoroughly with a potatoe masher.
Melt the butter and pour it and the other
ingredients in the bowl of potatoes. Stir
until well mixed.

Whether you used a ready made pie crust or
just cookies, pour the potatoes mixture
into the crust.

Put into an oven preheated to 375 degrees.
Cook for about 35-40 minutes or until a toothpick
inserted in the center comes out dry.

I like to eat the pie while still hot. It's
good cold too though.

If you want you can make a meringue topping by
blending confectionary sugar with egg whites.
After the pie is almost done, spread the
meringue thinly across the top. Continue baking
until the meringue turns light brown. If you
use the meringue, you can add the egg yokes
to the pie if you like. I prefer my pie
without eggs, so I just save the yokes for breakfast
