First of all, it doesn't say in the original version of the bible that the universe was created in 7 days, it says 7 periods of time.
The Romans were the first to come up with 'days' as a measurement of time, before that time was measured in lunar months and seasons.
(If you think that's weird, purple, pink and orange were invented in the 19 century)
The bible doesn't contradict evolution, no matter what the religious fruitcakes say.
Darwin was a devout Christian who didn't believe his own hypothesis, he just laid the facts down for people to do with them what they will.
The reason evolution is referred to as a 'theory' rather than a law or fact, is that in science, it's a theory if it cannot be proven without using the desired result in the equation. Just like the theory of relativity can never be upgraded to a fact unless it can be proven without relativity in the equation (It will never happen). A+B=C not C-B+A=C
On a side note, there is no mention of an apple in the original version of the bible, it's 'the fruit of the tree of knowledge'.
