I'm trying to lose weight and I'm also a vegetarian with a gluten intolerance, so it can be really difficult to concoct things that actually taste nice.
But occassionally I manage it, and I've just created something which tastes really nice:
100g quorn pieces
3 cubes frozen spinach
spray oil (that 1 cal stuff)
1/2 an onion
2 mushrooms
1/2 tin plum tomatoes in juice
black pepper
Use 5 or so sprays of oil in a frying pan. Put the spinach cubes in a bowl in the microwave to defrost for 5 minutes and then chop up the onion.
Fry the onion until soft, then add the spinach when it's defrosted, fry for a couple of minutes then add the tinned tomatoes and cook for another couple of minutes or so.
Add your quorn, stir it about a bit for 5 minutes, add your mushrooms, cook until they are soft, season with pepper and then serve.
Serves 1, but a hungry 1! A golden energy
